Foreword

Food waste is a pressing global issue, with over a third of food produced globally wasted each year. Most of this waste finds its way to overcrowded landfills, where the decomposition of food releases methane, a potent greenhouse gas. However, when harnessed effectively, food waste becomes a valuable resource, contributing for example to the production of bioenergy and various biobased products using a biorefinery approach. To capture the potential of food waste, effective organic waste management practices are essential. These strategies involve businesses, trade bodies, and government entities and encompass practices such as composting, recycling, and proper disposal.

Potential feedstocks from the food industry include waste and residues from fruit, vegetable, dairy, animal, and fishery processing. Household, restaurants, and municipal activities also generate substantial food waste. In the UK, where households contribute to over 60% of the nation’s food waste, the government has recently introduced plans to reform recycling.
